Fish still biting with cooler weather

Well, friends, the weather cooled off a little this past week, but that did not stop the fish from biting.
I have a report out of Yellow Bluff from Rayburn Goodman that every boat that went out last weekend was coming in with the limit. Folks were catching the limit on trout, spottail bass and some flounder. Cricket down at Two Way Fishing Camp said folks were catching plenty of trout. My good friend, Capt. Jim Sheridan, and party reported a good day on the water with 19 flounder.
 Speaking of flounder, here is a little recipe you might like to try. This is flounder with shrimp stuffing. This would be perfect on Christmas Day or for Christmas dinner.
Here is what you will need.   
6 tablespoons of butter, cubed
1 small onion, finely chopped
1/4 cup finely chopped celery
1/4  cup green pepper
1/4  cup red bell pepper
1 pound of uncooked shrimp, peeled, deveined and chopped
1/4 cup beef broth
1 teaspoon of Worcestershire sauce
1/2 teaspoon of dill weed
1/2 teaspoon of minced chives
Sea salt and cayenne pepper to taste
1 1/2 cups of bread crumbs for stuffing
The fish:
6 flounder fillets (about 3 ounces)
5 tablespoons of butter, melted
2 teaspoons of lemon juice
1 teaspoon on parsley
1/2 teaspoon of paprika
Sea salt and cracked black pepper to taste
Melt butter in a large skillet. Add onion, celery and green and red pepper; saute until tender. Add shrimp; cook and stir until the shrimp turn pink. Add the broth, Worcestershire sauce, dill, chives, salt and cayenne. Heat through and remove from heat, then stir in bread crumbs. Spoon about 1/2 cup stuffing into each filet; roll up.
Place filets in baking dish seam side up. Drizzle with butter and lemon juice. Sprinkle with seasonings.
Bake uncovered at 375 degrees for 20 to 25 minutes. This would be nice with some basmati rice and cold pinot grigio. Fabulous for a Saturday night or a Sunday afternoon; enjoy, my friends.
