The lion’s share of food service providers in Liberty County are a safe bet for sanitation and food handling, according to current scores issued by the Liberty County Environmental Health Department.
Of the 123 listed public food providers, 87 percent, or 107, scored A’s, and another 14 scored B’s on the quarterly inspections.
Each of the bars also scored an A, as did the schools, which are inspected twice a year.
“If you stay in the 90s, normally you’re pretty good … but anything going below 90, there are some problems going in the establishment that we have to be concerned about, there are some problems that we need to address,” Liberty County Environmental Health Director Linus R. Woodard said.
Two restaurants scored C’s: Wok N Roll on General Screven Way and The Big Cheesy on Highway 84.
“That means there are some real problems going on in the establishment if you get a C, there are some things you need to address and correct to get back up to standards,” he said.
Some counties levy fines against restaurants whose scores fall below a certain number, but Liberty does not, Woodard said. Local inspectors do take corrective action on the scene and return to follow up when necessary.
Even when inspectors return to a restaurant and the violation has been corrected, scores do not change until the next routine inspection, Woodard said.
Each item on the inspection has a point value ranging from 1 to 9 points and these are taken from a best possible score of 100. Higher points are taken for items with higher risk to cause illness and repeat violations take more points. The inspection form has two sections: risk factors and general retail practices.
Area scores are fairly consistent because restaurants seek to perform well — and it likely helps that state law requires the scores to be visible at each establishment.
“All establishments want to get good grades; if they don’t get one, they’re very disappointed because the public is now looking,” Woodard said, adding that some customers call the office to ask about restaurant statuses.
“They’re basically looking at your temperature, your cleanliness of the establishment, your employees. We ask some questions of the establishment and see if they can answer the questions properly,” he said. “Where the food comes in, how it comes in; how is the food prepared? How is it stored in coolers and in dry storage?”
Every month, inspectors call on a number of food service providers; each is inspected four times per year.
In rare instances, the department will request that establishments temporarily shut down to remedy issues of noncompliance, though Woodard said that only happens two to three times per year. This round of inspections does not indicate any closures.
“Things can still happen in between those times, but we’ve got to make sure we do our part …,” he said. “We can’t stay in there 24/7, but if an establishment is not doing well, we go in there a little more often.”
