Liberty County restaurant sanitation scores

The following are among the food service establishments inspected in February by the Liberty County Health Department. The department scores on a 100-percentile scale. Kitchens are inspected at least every four months and are required to post their score sheets in public. The score and selected comments from health inspectors are included in each report. Feb. 24
• Chopsticks Cafe 1968 Inc., 862 E.G. Miles Pkwy., Ste. E, Hinesville. Score: 87. Grade: B.
Remarks: (1) Observed owner taking orders on the phone and walking to the front of the kitchen to take orders. Then the owner entered into the kitchen to prepare food without first washing hands. I stopped the owner from working with food and told him to wash his hand because he has been taking order and answering the telephone. New violation. (2) Observed food stored in the reach-in cooler not properly date marked with preparation date (cooked chicken, fried chicken wings, etc.). New violation. (3) Observed wet wiping cloths stored on counter and prep tables. (4) Observed holes in the screened back door. (5) Observed water damages ceiling tiles. (6) Observed temp alarm blinking on the reach-in freezer. (7) Need to check freezer to make sure it is working properly. (8) Owner is not going to use the dishwasher to clean dishes because the sanitizer distribution line is not working properly. Owner is going to clean dishware in the 3-compartment sink. (9) The chicken that was cooling on the table/counter tops was moved to the walk-in cooler to continue the cooling process.

• Pizza Hut Restaurant #316218, 730 E. Oglethorpe Hwy., Hinesville. Score: 92. Grade: A.
Remarks: (1) Observed black and pink build up in the interior of the ice machine. Observed food debris on the interior of clean pizza pans. New violation. (2) Observed no sanitizer in the dish washer: Corrected on site by replacing sanitizer container and priming dishwasher. New violation. (3) Observed wet stacked pizza pans. New violation. (4) Observed food debris and build up on non food contact surfaces. (walls, green racks, floors, etc.) New violation. (5) Observed faucet leaking on 3-compartment sink. New violation. (6) Observed single-use containers stored on the floor in outside storage area. (7) Manager stated they use soda water for soda drink nozzles. Need to wash, rinse, and sanitize nozzles every day.

• Quality Suites (Breakfast), 70 Wallace Martin Dr., Hinesville. Score: 87. Grade: B.
Remarks: (1) Observe no paper towels at handwashing sink. Found paper towels under the 3-compartment sink. Corrected On-Site. New violation. (2) Observed boiled eggs removed from original container and not properly date marked with removal/opening date. Observed pasteurized eggs stored in the refrigerator dated 12/16/2015. Corrected on site by discarding. New violation. (3) Observed apples stored on the breakfast buffet not protected against possible contamination from customers and contaminants. New violation. (4) Observed inspection sheet not posted for customers to view. Repeat violation. (5) Observed microwave dirty with food spillage on the breakfast buffet. (6) Observed Servsafe Food Handler Certificate posted. Facility needs to employ or obtain a Certified Food Safety Manager and post the certification. Facility has 60 days to obtain certification. (7) Observed broken thermometer stored in the refrigerator.
