Hello, friends and neighbors. Tight line Jr. here with a little weekend meal idea. Now that it’s a bit too cold for fishing, I think you’ll appreciate this tasty, hot dinner.

Spottail bass with cream sauce

Ingredients:

4 bass fillets

½ teaspoon salt

½ teaspoon pepper

1 cup sour cream

1 package of garlic and onion dip mix

1 cup mozzarella cheese

Green onion curls for garnish

Directions:

Place filets in a single layer in a well-oiled casserole dish.

Sprinkle with salt and pepper.

In a pint bowl, mix the sour cream and dip. Spread the mixture over the fish. Sprinkle with cheese. Bake at 325 degrees for 25 to 30 minutes or until fish flakes and the cheese is crispy and brown.

Garnish with green onion curls.

Well, there you have it. Now enjoy.

I have a cold weather tip for all you folks out there from my buddy Roy Rogers. Not the famous cowboy, but the famous Rogers from our neck of the woods.

Don’t wash your car in the late afternoon because the cold weather will make your door gaskets freeze. I found that to be useful advice and I hope it helps someone else as well.

Until next time, remember what Ol’ Tight Line always said: Get out there and get fishing and if you do, always remember to keep a tight line. I always say hit the dock, kep a sharp eye and watch that cork go down. Now get out there and wet a hook. It’s good for the soul.

Once again, I would like say thank you to all the men and women serving our great country.

Your buddy,

Tight Line Jr.
