Take crunchy shrimp to playoffs

Hello friends and neighbors. This week I have a little spiced-up shrimp recipe I thought you may like to try while watching some of the NFL playoff games.

This is what you will need

1 pound of peeled and deveined Georgia shrimp, finely chopped

cup of mayo

1 cup sour dough bread crumbs

1 large egg

1 tablespoon prepared horseradish

1 tablespoon chopped chives

½ finely chopped raw jalapeno

Kosher salt and fresh cracked black pepper

6 cups mixed greens

1 cup cherry tomatoes, quartered

4 radishes, thinly sliced.

In a large bowl, mix together the shrimp, mayo, bread crumbs, egg, horseradish, chives and japleno. Add teaspoon salt and ¼ teaspoon pepper. Form the mixture into 8 patties. Chill until firm, about 30 minutes.

Heat a little oil in a large skillet over medium-high heat. In two batches cook the patties until cooked through, 3 to 4 minutes per side.

In the meantime, in another large bowl, whisk together some white wine vinegar, some virgin olive oil, ½ teaspoon salt, ¼ teaspoon cracked black pepper. Add the greens, tomatoes and radishes, toss to combine.

Now kick back with a beverage of your choice. I suggest a good pinot grigio. And you are ready for game time.
