Restaurant sanitation scores March 10

The following are among the food service establishments inspected in February by the Liberty County Health Department. The department scores on a 100-percentile scale. Kitchens are inspected at least every four months and are required to post their score sheets in public. The score and selected comments from health inspectors are included in each report. Feb. 2

• Clyde’s Great Southern BBQ, 211 Second Ave., Midway. Score: 94. Grade: A.

Remarks: (1) No Certified Food Manager for establishment. Repeat from previous inspection. I talked to owner about permit being suspended or revoked if the facility does not have a CFSM during next inspection. Repeat violation. (2) Facility was not open during inspection.

• Holton’s Seafood Restaurant, 13711 E. Oglethorpe Hwy., Midway. Score: 92. Grade: A.

Remarks: (1) Observed black substance on the interior of the ice machine. New violation. (2) Observed no date marking on boiled eggs and open container of milk. Need to date mark food items if not used within 24 hours. Food can only be used within 7 days from preparation. New violation. (3) Need to replace burned out light bulbs in the kitchen area. (4) Need to replace air and probe thermometers. (5)
Observed lid broken on grease receptacle /septic outside. Observed invoice from Oreogin Inc. stating that they lid will be replaced between Feb. 7-15, 2016. (6) Observed paint chipping on the ceiling in the women’s bathroom. (7) Need a public notice on buffet for customers to receive a clean plate and make sure the plates are inverted or stored under the shield on the buffet line. (8) The raw hamburger meat was out during lunch and the manager put the meat in the walk-in cooler to decrease the temperature.

Feb. 4

• Stoner’s Pizza Joint, 103 General Screven Way, Ste. D, Hinesville. Score: 99. Grade: A.

Remarks: (1) No handwashing sign provided at a hand sink used by food employees. No Heimlich maneuver sign posted. New violation.

• Taters Pizzeria, 5794 Hwy. 196, Hinesville. Score: 100. Grade: A.

Remarks: (1) None.

Feb. 5

• Subway (Midway), 21-B Isle of White Rd., Midway. Score: 96. Grade: A.

Remarks: (1) Observed packages of expires sliced apples stored in the walk-in cooler. Expiration date 2/3/2016. Repeat from previous inspection. Corrected on site by discarding. Repeat violation. (2) Observed Christopher McMichael’s Servsafe certificate posted. Person in charge stated he does not work at the facility. Owner has 60 days to employee another CFSM or have current staff take Food Safety Course. (3)

Observed soup warmer, soup bowls, and coffee cups stored around front handwashing sink. Need to place splash guard around sink to prevent possible contamination or move items from around sink. (4) Talked to person in charge about properly washing blade on slicer and drink nozzles on Coca-Cola machine. (5)  Observed dim lights in the women’s bathroom

Feb. 8

• Applebee’s Neighborhood Grill & Bar, 1492 E. Oglethorpe Hwy., Hinesville. Score: 93. Grade: A.

Remarks: (1) Observed food debris and build up on spoons, scoops, and ladles. Observed food build up on the blade from the slicer. Repeat from previous inspection. Corrected on site by rewashing dishes. (2) Observed silver containers stored on the drying racks stacked while wet. New violation. (3) Temperature elevated in the bar cooler because opening and closing door during lunch time. Need to check and make sure it is working properly. If the milk temperature does not decrease to 41F within an hour move the milk to walk-in cooler.

• Huddle House (Hinesville), 710 E. Oglethorpe Hwy., Hinesville. Score: 96. Grade: A.

Remarks: (1) Observed employee eating in the rear kitchen/prep area: Corrected on site by manager telling the employee she cannot eat in the kitchen and employee leaving the kitchen area. New violation. (2) Observed faucet leaking on the vegetable sink. (3) Observed a box of cut lettuce stored in the walk-in cooler past best by date. Best by date was 2/6/16. Manager stated the lettuce was delivered on Friday and she will return the food to suppler today. (4) Observed commercially reduced oxygen packaging raw beef stored beside a container of cooked beef and commercially packaged and prepared chili. Need to move the ready-to-eat and commercially prepared items above raw meats.

• Travelodge (Breakfast), 738 E. Oglethorpe Hwy., Hinesville. Score: 91. Grade: A.

Remarks: (1) Observed milk in the refrigerator above 41F. If the refrigerator is not keeping food at the proper temperature and cannot be repaired the facility will need to get a commercial refrigerator cooler. Corrected on site by manager discarding of milk. Turning down thermostat on refrigerator. The ambient thermometer started to decrease. The manager stated that he will check thermometer daily and buy some more milk for the facility. New violation. (2) Observed milk stored in the refrigerator not date marked. Owner was unsure when the milk was opened. The milk that was not date marked is the same milk that was above 41F. COS by owner discarding of milk. (3) Observed boxes of waffle batter mix stored on the floor.

Owner stated that mix was delivered today.
