The following are among the food service establishments inspected in December by the Liberty County Health Department. The department scores on a 100-percentile scale. Kitchens are inspected at least every four months and are required to post their score sheets in public. The score and selected comments from health inspectors are included in each report. Dec. 18
• El Cazador Mexican Restaurant, 806 Willowbrook Dr., Unit 114, Hinesville. Score: 81. Grade: B.
Remarks: (1) Employees have not received training related to their assigned duties. Observed employee cooking chicken, beef and shrimp. I asked what is the cooking temperature and he stated that he thinks the temperature is 140 or 145 degrees. CFSM or person in charge needs to train staff on proper cooking temperatures. Suggest posting signs in the cooking area. New violation. (2) Observed employee touching raw meats and then touch ready-to-eat food without washing hands and changing soiled gloves. Talked to person in charge about incident. New violation. (3) Observed water pooling at the bottom of the beer cooler: Repeat from previous inspection. Repeat violation. (4) Observed small flying insects in the kitchen area: Repeat from previous inspection. Repeat violation. (5) The sliced tomatoes above 41 degrees were discarded. Talked to the manager about storing sliced vegetables under grill on ice: If the food cannot be maintained at 41 degrees, the food needs to be stored in a cooler. Need to check food temperatures after lunch rush. (6) Need designated area for employee food. (7) Observed black and pink substance inside the ice machine. Need to clean inside the ice machine. (8) Will follow up on facility.

• Panera Bread, 1190 E. Oglethorpe Hwy., Hinesville. Score: 91. Grade: A.
Remarks: (1) Observed several food items stored in the coolers above 41 degrees. Corrected on site by discarding food and/or placing ice around food, or moving food to the walk-in cooler to reduce food temperatures. Need to replace thermometer in the cooler by the drive-thru window. The internal thermometer Is reading 20 degrees. New violation. (2) Observed no paper towels in the bathroom. Need to supply paper towels in the bathroom because hands can become re-contaminated when the door handle needs to be pushed to open the door. (3) Observed faucet and hose on 3-compartment sink spraying water and pipe leaking under 3-compartment sink. (4) Need to store dishwashing racks 6 inches off the floor.

Dec. 21
• Dairy Queen Grill & Chill, 757 E. Oglethorpe Hwy., Hinesville. Score: 95. Grade: A.
Remarks: (1) Observed grease build-up on fryers and equipment. New violation. (2) Observed paint peeling in walk-in cooler. Observed stained paint on ceiling throughout facility. New violation. (3) Observed gap in back door, needs weather sealing. Observed one live roach in kitchen, no other evidence seen. New violation.
