Restaurant sanitation scores March 21

The following are among the food service establishments inspected in February by the Liberty County Health Department. The department scores on a 100-percentile scale. Kitchens are inspected at least every four months and are required to post their score sheets in public. The score and selected comments from health inspectors are included in each report. Feb. 18
• El Coqui Bakery LLC, 790 Veterans Pkwy., Hinesville. Score: 100. Grade: A.
Remarks: (1) The owner bought a new prep line cooler. (2) Need to observe passed inspections from City of Hinesville and Fire Marshal to received food service permit.
• Won Ton Chinese Restaurant, 131 W. Hendry St., Hinesville. Score: 89. Grade: B.
Remarks: (1) Observed multiple food items stored in the reach-in cooler and walk-in cooler cooked yesterday and not cooled to 41F within 6 hours: Corrected on site by discarding. New violation. (2) Observed multiple non food contact surfaces dirty with food residue, food splatter, and grease build up (walls, outside of the equipment, etc.) Repeat from previous inspection. (3) Observed water damaged ceiling tiles in the kitchen and dining room. (4) Talked to owner about cooling food in the walk-in cooler instead of the bottom of the prep cooler. I also discussed cooling food in the smaller containers, not filling containers to the top (fill the containers half way), Place the food on the top racks in the walk-in cooler or cool the food in the freezer.

Feb. 23
• Dairy Queen Grill & Chill, 757 E. Oglethorpe Hwy., Hinesville. Score: 100. Grade: A.
Remarks: (1) Observed open container of commercially processed coleslaw with the delivery date 12/2015 and a closed container of coleslaw with the best by date 01/12/2016. Corrected on site by discarding of open container and discarding of the coleslaw on the prep line. The owner removed the unopened container of coleslaw and removed it from the walk-in cooler to see if she can return to distributor. (2) Talked to the owners about date marking open processed foods. (3) Observed water damaged ceiling in the kitchen.
• Sumo Japanese Restaurant, 551 W. Oglethorpe Hwy., Hinesville. Score: 91. Grade: A.
Remarks: (1) Observed food stored in the prep line above 41F. Corrected on site by employee discarding of the food or moving the food to the walk-in cooler. Manager turned down the thermostat to reduce temperature. Ambient thermometer 50F. New violation. (2) Observed sushi rice stored at room temperature without time marker. Corrected on site by discarding of rice. Need to sign time agreement with LCEH. New violation.
• Taco Tortilla, 549 W. Oglethorpe Hwy., Hinesville. Score: 91. Grade: A.
Remarks: (1) Observed manager walk out of the back door and return to the facility and then prepare a customer food without changing gloves and washing hands. Talked to the owner about the incident and when to wash hands. New violation. (2) Observed gap at the bottom of the back door. Need to seal door in which no light passes through.
