Restraurant sanitation scores for April 18

The following are among the food service establishments inspected in March by the Liberty County Health Department. The department scores on a 100-percentile scale. Kitchens are inspected at least every four months and are required to post their score sheets in public. The score and selected comments from health inspectors are included in each report. March 2

• Subway #10624, 466 General Screven Way, Hinesville. Score: 100. Grade: A.

Remarks: (1) Need Certified Food Safety Manager within 60 days from receiving food service permit. (2) Need commercial hose for mop sink. Owner stated the he ordered the hoses and they will be delivered soon.

• Subway #27016, 771 Frank Cochran Rd., Hinesville. Score: 100. Grade: A.

Remarks: (1) Need to repair self-closing fixture on back door. (2) Need to replace broken base board behind employee door. (3) Need Certified Food Safety manager within 60 days from receiving food service permit. (4) Need commercial hose for mop sink. Owner stated the he ordered the hoses and they should be delivered soon.

• Subway #27017, 740 E. General Stewart Way, Hinesville. Score: 100. Grade: A.

Remarks: (1) Need Certified Food Safety Manager within 60 days from receiving food service permit. (2) Need commercial hose for mop sink. Owner stated that he ordered the hose and it will be delivered soon.

• Subway #47926, 2351 W. Highway 196, Hinesville. Score: 100. Grade: A.

Remarks: (1) Need to see exterminator agreement for facility before receive food service permit. Owner stated that he will bring the agreement to the office or email the agreement to me. (2) Need commercial grade hose for mop sink. Owner stated that he ordered the hoses and they will be delivered soon. (3) Need Certified Food Safety Manager with 60 days from receiving food service permit.

• Subway #5712, 531 W. Oglethorpe Hwy, Hinesville. Score: 100. Grade: A.

Remarks: (1) Need food/commercial grade hose for mop sink. Owner stated that he ordered the hoses and they will be at the facility soon. (2) Need Certified Food Safety Manager 60 days from receiving food service permit.

March 3

• McDonald’s (Hwy 196), 801 E.G. Miles Pkwy., Hinesville. Score: 86. Grade: B.

Remarks: (1) Observed posted food safety manager certificates that were expired or people no longer employed at the establishment. Corrected on site by providing the updated certificates for current managers. New violation. (2) Observed build-up on soda nozzles in front soda machine. Corrected on-site by cleaning soda nozzles. Repeat violation. (3) Observed expired sliced apples in walk-in cooler. Expiration date 03/01/2016 Corrected on site by discarding sliced apples. New violation. (4) Observed food debris and food splatter on the interior of the microwave. New violation. (5) Observed McChicken Patty temped 129F was in warmer drawer that was set for hot holding breakfast foods. Told the manager to check warmer to make sure it is working properly and talk to the employees about checking equipment and temperatures. (6) Folded Egg temped at 128F was discarded during switch over from breakfast to lunch. (7) Shelled eggs kept out at room temperature near grill were discarded during switchover from breakfast to lunch. Talked to manager about employees keeping the shell eggs at room temperature more than allotted time frame. (8) Observed no paper towels in women’s restroom. Corrected on site by refilling paper towel dispenser. (9) Observed drain plugs missing from dumpsters. Corrected on site by replacing drain plugs.

March 4

• Waffle House Inc., 442 E.G. Miles Pkwy., Hinesville. Score: 96. Grade: A.

Remarks: (1) Observed warewasher not reaching the required 165 temperature to properly sanitize dishware. Corrective Action: Must use three compartment sink to wash rinse and sanitize. Warewasher may not be used until it can reach proper temperature. New violation. (2) Observed debris under shelves in dry storage area. (3) Observed water pooling under ice cabinet. (4) The diced tomatoes at 50 and 49F were prepped and placed on the prep line about an hour ago.

March 7

• Larry’s Giant Subs #1, 755 W. Oglethorpe Hwy., Ste. 112, Hinesville. Score: 98. Grade: A.

Remarks: (1) Observed inspection sheet not posted for public view. New violation. (2) Observed facility without proper sanitizing strips. Facility needs to buy quat sanitizing strips for 3-compartment sink. New violation. (3) Observed/felt sticky material on cabinets under the soda dispensing machine. (4) Observed no date marker for commercially processed chicken salad. Corrected on-site by discarding.
